The last couple of days have been soooooooooo beautiful and warm.  It seems like Fall is here again today and has brought wind which I LOVE.  This menu fits the new weather. 🙂

–Ministrone Soup w/Sausage and Squash- http://www.closetcooking.com/2008/01/ministrone-soup-with-sausage-and-squash.html

Run Down: This might be one of my top favorite soups.  I loved the sausage, squash and fresh herbs which are all ingredients I don’t usually use in soup.  Gabe ate it 3 days in a row, which is unheard of.

Sweet Balsamic Glazed Pork Loin http://www.melskitchencafe.com/2011/09/sweet-balsamic-glazed-pork-loin-slow-cooker.html w/Brown Rice and Asian Cucumbers-http://www.myrecipes.com/recipe/asian-cucumber-salad-10000001194637/

Run Down: Yum YUM! This was sooooooooo good.  The glaze was amazing and I think would be really good on chicken and salmon too. I think I over cooked the pork so it was pretty crisp/charred on the outside but I kind of liked it that way.  The rice and cucumbers were a perfect accompaniment.

Fish Tacos- Corn Tortillas filled w/fish fillets (TJ’s), shredded cabbage, green onion, feta, ranch (leftover from last week), salsa.  Served with black beans and maybe french fries from freezer.

Run Down: I love this meal cause it’s quick and fresh and used a lot of stuff we had in our fridge. 🙂

What’s on your menu this week???
