Cold and wet here in the Northwest but I’m enjoying the food that goes with it…
–BBQ Pork Quesadillas- Flour tortillas filled with pulled pork, cheddar cheese and BBQ Sauce. Cook until crispy on both sides. Once cooked fill with coleslaw and cut in wedges. Yum! Serving w/ Sweet potato fries.
Run Down: I think I might have created this recipe! About a year ago we had way too much pulled pork in our fridge and tried it in a cheese quessadilla stuffed with cool crisp coleslaw. Kaleb and I both thought is one of the best things. Now I make pulled pork just so we can have these quesadillas.
–Brown Sugar Meatloaf- http://allrecipes.com/Recipe/brown-sugar-meatloaf/detail.aspx (I use turkey instead of beef and reduce the b. sugar to a couple a tablespoons)w/Twice Baked Cauliflower-http://www.kalynskitchen.com/2006/09/twice-baked-cauliflower-recipe.html.
Run Down: I always thought I didn’t really like meatloaf until I found this recipe. It is super easy and tastes so good in a comforting type of way. Paired with the Twice Baked Cauliflower it makes a perfect meal that is good enough to serve to company.
–Southwestern Chicken Soup- 12oz jar salsa verde, 2 chicken breasts, can cannellini beans (drained), chopped onion, chopped green pepper, any other veggies you want. Put everything in the crock pot and cook for 6-8 hours on low. Shred chicken. Serve with Sour cream, cheese, tortilla chips, green onion, cilantro and lime.
Run Down: I have been making this soup for 7 years (since our first year of marriage) and it still one of our favorite soups. It is so easy. Don’t forget the toppings though, they really do make the soup.
