This is a big week for Kaleb. He starts a new job at Edmonds Community College on Monday (tomorrow) and is celebrating his 29th birthday on Saturday! I’m still deciding what his birthday meal should be…

 –Acorn Squash Lasagna (Community Group Dinner)- 

Two Acorn squash roasted, scooped out and mashed                                                   1 container mascarpone cheese (Trader Joe’s has this)                                Chopped spinach (couple handfuls or as much as you prefer)
1.5 jars of red sauce (your choice or Trader Joe’s three cheese sauce)
Lasagna noodles
Mozzerella Cheese shredded and Parmesan Cheese

Mix the first four ingredients (sauce, squash, spinach and mascarpone cheese) together. . In a 9×13 pan layer noodles, sauce mixture and cheeses, repeat and add any extra cheese to the top.
Bake at 375 for 45 mins or until center cheese is melted on top. Enjoy!

Run Down: Goodness, I love this lasagna! Besides the roasting of the squash this is really easy to put together.  The taste is so yummy and is perfect for this time of year.

Run Down: We made this not too long ago and liked it but I think we liked it even better this time.

Caesar Chicken Wraps- Tortillas filled with crispy chicken tenders (TJ’s), romaine lettuce, chopped tomatoes, parmesan cheese, caesar dressing.

Run Down: I loved these.  I could eat these every day.  Kaleb on the other hand wasn’t very impressed.  I guess this is a girls night meal.  I feel though, that most people would really like these.
