Run Down: This is the second time I’ve made this. The first time I LOVED it but this time I didn’t like it as much. It tasted fine but the consistency bothered me.

Run Down: The meat was amazing! It was very flavorful and I think would be good in a quesadilla or stir fry. The coleslaw that was to go on top of the tacos was a little blah but next time I think I would add cilantro and chopped peanuts.
Sandwiches & Soup-Just meat, cheese, lettuce and tomato on good bread and served with my new favorite soup: Pacific tomato and Roasted Red Pepper.

Run Down: I think this will be my go to sweet potato dish for the holidays. My family said it was the best sweet potato casserole they have ever had! I eliminated the sugar in the potato mixture and it turned out perfect.

Run Down: I didn’t make these. 😦 Once I looked at the recipe it seemed too labor intensive w/ a toddler under foot. I really want to try these, though… Will you make them for me?
