I have been having such a hard time making dinner with our little monster under foot. No matter how I time it the second I start making dinner he becomes a very dramatic needy little boy. I promised myself that I need to start making meals that don’t require a lot of prep but I don’t think that’s the case this week. Next week! Easy meals next week!!!
Homemade Big Macs-http://www.cinnamonspiceandeverythingnice.com/2011/12/homemade-big-macs.html and Sweet Potato Fries (costco freezer section)- I made sliders (mini burgers) by using smaller dinner rolls.
Run Down: These were so good! Gabe danced in his high chair the whole time he ate dinner ’cause it was that good.
Creamy Chicken Taquitos- http://jessieheaviland.blogspot.com/2010/07/creamy-chicken-taquitos.html, Crock Pot Refried Beans–http://budgetbytes.blogspot.com/2011/08/not-refried-beans-275-recipe-031.html and Spanish Slaw– http://allrecipes.com/recipe/spanish-slaw/
Run Down: As most of you know I’m crazy about these taquitos and the refried beans and slaw complimented perfect. I loved the beans. They are way better the next day and were nice to have in the fridge for quick snacks for Gabe and Kaleb. The slaw was fresh and tasty and perfect next to all those carbs.
Tender Pork Chops with Caramelized Apples and Onions–http://www.melskitchencafe.com/2010/04/tender-pork-chops-with-caramelized-apples-and-onions.html and Roasted Garlic and Parmesan Mashed Potatoes–http://www.melskitchencafe.com/2010/04/roasted-garlic-and-parmesan-mashed-potatoes.html– I’m going to reduce the amount of potatoes and replace with broccoli to boost nutrition…🙂
Run Down: This was soooooooooooo good and probably one of the best meals I have made. The pork was soooo tender and amazing with the apples and onions. The Parm potatoes mixed with broccoli was the best potato dish I have ever had. During the whole meal we raved and then we licked our plates clean. Gabe loved it and happily ate leftover (very rare).
Thai Chicken Pizza–http://tastykitchen.com/blog/2011/12/thai-chicken-pizza/
Run Down: YUM! This tasted like pad thai in pizza form and was so delish. I use Trader Joe pizza dough and love it. For years I used to make my own dough and I don’t know why. TJ dough is just as good…maybe better and so easy.
