We are enjoying some snow! Finally! The meal plan this week is kind of random due to trying to use up a bunch of “stuff” from the fridge and freezer.  Have a great week and I would love to know what your eating.

Run Down: LOVE those tacos.  The beef is so flavorful and the slaw compliments it perfectly.  The Rangoons were soooooooo good! This is my fave appetizer to order at an Asian restaurant but there not very good for you and pricey.  The at home version is delish, healthier and cheaper.  Kaleb loved them too.

Baked Fish (from freezer)-simply baked with olive oil, lemon and salt and pepper and –Macaroni and Cheese http://www.tantemarie.com/tmcs/?p=581 adding chopped brocoli to the mac and cheese.

Run Down: Easy dinner and really good.

Black Bean Burgers(costco) and Sweet Potato Fries(costco)

Run Down: Run out and by these black bean burgers from Costco.  They are soooooooooo yummy!

Salad-chicken, eggs, tomatoes, cheese, sweet red pepper, garbonzo beans topped on a big heap of lettuce served with Ranch Dressinghttp://annies-eats.com/2010/07/08/ranch-dressing/

Run Down: I have been looking for homemade ranch dressing recipe for quite a while now and have finally found it.  This ranch dressing is full of flavor and creamy but also fresh tasting and not rich.  Yum! Perfect on a salad or as a dipping sauce.

Blueberry Muffins– http://www.browneyedbaker.com/2011/05/31/blueberry-muffins-recipe/using whole wheat flour instead of white.

Run Down: These are my new go to muffin recipe.  The taste and texture is perfect even using all wheat flour.

Run Down: AMAZING! I assembled it the night before and was a little annoyed at how time-consuming it was and then the next morning I had a feeling it would not be good.  I was wrong!  This is the perfect dish for a brunch or special breakfast and totally worth the work.
