Baked Potato Bar(for a very early Christmas party)-I’m using this recipe to bake the potatos-http://www.food.com/recipe/best-baked-potato-71933 and then serving the following toppings: chilli, shredded cheese, green onion, crumbled bacon, steamed broccoli, sliced olives, tortilla chips.

Acorn Squash Lasagna (Community Group Dinner)-
Two Acorn squash roasted, scooped out and mashed 1 container mascarpone cheese (Trader Joe’s has this) Chopped spinach (couple handfuls or as much as you prefer)
1.5 jars of red sauce (your choice or Trader Joe’s three cheese sauce)
Mozzerella Cheese shredded and Parmesan Cheese
Mix the first four ingredients (sauce, squash, spinach and mascarpone cheese) together. . In a 9×13 pan layer noodles, sauce mixture and cheeses, repeat and add any extra cheese to the top.
Bake at 375 for 45 mins or until center cheese is melted on top. Enjoy!
