Here is my top 17 recipes of 2012. I really tried to narrow it down to 10 but I couldn’t do it! There was so many delish recipes this past year and it was fun to look back and not only be reminded of the good food but the friends and family that I shared it with.
Thai Chicken Pizza–http://tastykitchen.com/blog/2011/12/thai-chicken-pizza/-this is full a flavor and pretty much perfect. I double the toppings so it is a hearty main dish. Just know that if you make this you will want to make it at least once a weak.
Tender Pork Chops with Caramelized Apples and Onions–http://www.melskitchencafe.com/2010/04/tender-pork-chops-with-caramelized-apples-and-onions.html -this is easy, fairly cheap and delicious. I don’t know what happens in the oven but it is magical!
Spicy Bean Burritos –http://annies-eats.com/2011/01/25/spicy-bean-burritos/ –I love these! They are full of flavor and I love that its vegetarian. I usually make a double batch of the bean mixture and freeze some.
Shredded Beef and Sweet Potato Baked Taquitos–http://www.fortheloveofcooking.net/2011/01/shredded-beef-and-sweet-potato-baked-taquitos.html-I only made these once last year but I can’t stop thinking about them. The flavors work so well together. They do take some time to make but its worth it.
Mediterranean Chicken Wraps –http://www.emilybites.com/2012/04/mediterranean-chicken-wraps.html -These have tons of flavor and are pretty easy to prepare. We add tatziki sauce from Trader Joes and sliced green pepper.
Balsamic Chicken w/ Goat Cheese–http://jessieheaviland.blogspot.com/search?q=balsamic+chicken -This is so yummy! I feel so fancy when I eat it. Every time I’ve made this I’ve had fresh rosemary so I used in place of the basil and it is still perfect.
Shrimp and Goat Cheese Quesadillas–http://www.eatliverun.com/ten-minute-shrimp-and-goat-cheese-quesadillas/-These are life changing! The goat cheese is genius. I really wish I would of thought of it.
Sweet Balsamic Glazed Pork Loinhttp://www.melskitchencafe.com/2011/09/sweet-balsamic-glazed-pork-loin-slow-cooker.html-This is so easy and so delish. The meat is sticky crispy on the outside and moist inside. I serve it with brown rice and Asian cucumbers (recipe below).
Sweet Corn Fritters with Tomato and Feta Salad–http://www.relish.com/recipes/sweet-corn-fritters-with-tomato-and-feta-salad/-This was my favorite recipe of the summer. It tasted so fresh and I loved all the contrasting flavors.
Apple Dijon Kale Salad –http://budgetbytes.blogspot.com/2012/06/apple-dijon-kale-salad-553-recipe-138.html -I discovered this past year that I LOVE kale and this salad is my favorite way to eat it. I add honey to the dressing to mellow it out but other than that this recipe is perfect.
Roasted Garlic and Parmesan Mashed Potatoes–http://www.melskitchencafe.com/2010/04/roasted-garlic-and-parmesan-mashed-potatoes.html– I reduce the amount of potatoes and replace with broccoli to boost nutrition. This is my go to side. It has so much flavor and pairs perfectly with meat.
Asian Cucumbers-http://www.myrecipes.com/recipe/asian-cucumber-salad-10000001194637/-Kaleb and Gabriel gobble these up and I try to have them in the fridge for an easy snack or side dish.
Crock Pot Refried Beans–http://budgetbytes.blogspot.com/2011/08/not-refried-beans-275-recipe-031.html -Kaleb loves refried beans but I didn’t like the taste of the can ones. I now love them too thanks to this recipe. They are so easy to make and taste sooooooooooo good.
The Cornbread and Fluffy Honey Butter-http://www.melskitchencafe.com/2009/08/the-cornbread-and-fluffy-honey-butter.html -This is the best cornbread! It has the perfect taste and texture. I don’t always make the honey butter with it ’cause I try to keep my butter intake low but seriously, it is so delicious.
No Bake Peanut Butter Pretzel Chocolate Chip Granola Bars-http://www.twopeasandtheirpod.com/no-bake-peanut-butter-pretzel-chocolate-chip-granola-bars/-These taste so crazy good that one bite made me cry out loud that I would never eat a store bought granola bar again. They are kind of crumbly when at room temperature which is a little for a toddler and their mom.
Peach Cobbler Scones–http://joythebaker.com/2012/06/peach-cobbler-scones/-These are so perfect! I really don’t have words. They make me speechless.
Buttermilk Blueberry Breakfast Cake –http://www.fortheloveofcooking.net/2012/02/buttermilk-blueberry-breakfast-cake.html -This cake is really easy and delish. It is a cross between a cake and a scone which equals perfection.
