The weather is heating up and soup and casseroles just don’t sound good right now. I feel like I could have this menu every week this summer.
Breakfast for Dinner– Waffles, Eggs and fruit
Romaine Salad w/Chicken, Cheddar, Apples, Spiced Pecans and Cranberry Vinaigrette –This was so good we are having again this week.
BBQ Chicken Quesadillas– Instead of jalapenos i’m adding red onion and bell peppers. Serving with corn.
Big Fat Greek Tacos -I use half ground turkey and half ground beef. Serving w/ tortilla chips and celery sticks.
