Baked Salmon – Served w/ Asian Salad (salad kit from Costco) and spring rolls (Costco).

Chicken, Apple, Pesto and Goat Cheese Sandwiches – Spread bread with pesto on each side add a layer of goat cheese, thinly sliced apple and cooked chicken. Grill both sides of sandwich. The best!

Breakfast and snacks I hope to make this week to have in the fridge and freezer so we will be stocked when Gabe starts Kindergarten (tear).

Blueberry Coconut Pecan Breakfast Cookies – going to use dried apricots instead of blueberries b/c that is what I have on hand.

Peanut Butter and Honey Cereal Bars

Whole Wheat Banana Muffins – I add frozen blueberries.
